Flan de Ratatouille/ Ratatouille pudding

Este flan de ratatouille se ha convertido en uno de mis recetas favoritas, no solamente porque sea bonito de ver sino porque ayuda en aprovechar los restos de comida.
Hace unos días hice una receta de Ratatouille y ha sido un éxito tanto en el sabor como en la presentación. Si no conoces esta receta antes te digo que es un plato de verduras de origen francés, hecho a base de berenjenas, calabacines y tomate que se prepara en el horno. Se hace una especie de pisto y se pone en el fondo de un plato apto para horno, se cortan las verduras en rodajas muy finas y se colocan por encima de este pisto. Se riegan con un poco de aceite de oliva y se tapa con papel de aluminio y al horno. Y como sale una gran cantidad, había que aprovechar el resto de alguna manera así que aquí os presento este flan de ratatouille que podéis servir como paté sobre una tostada o incluso comerlo como dip con unos bastoncitos de verduras. Vamos con la receta

Ingredientes


  • 250 gr. de ratatouille
  • 1 cebolla
  • 1 cta de aceite
  • 30 gr. de queso parmesano
  • 2 huevos
  • unas hojas de albahaca fresca (ingrediente clave)

Preparación


  1. Precalentar el horno a 180 grados
  2. Sofreír la cebolla en la cucharadita de aceite
  3. Licuar el ratatouille con la batidora y agregar la cebolla sofrita y batir.
  4. Batir los huevos con un tenedor en un bol y agregarlos a la mezca de ratatouille y cebolla.
  5. Agregar el queso y las hojas de albahacas finamente cortadas y remover.
  6. Engrasar un molde bundt (o moldes de flan individuales o de cupcakes).
  7. Repartir la mezcla en los moldes y hornear durante 20-25 minutos hasta que al instertar un palillo en el centro salga limpio.
  8. Sacar del horno y dejar enfriar completamente antes de desmoldar.



Podéis disfrutar de este flan untándolo sobre un a tostada, con un poco de tomate rallado y un chorrito de aceite de oliva virgen extra. ¡Está riquísimo!

This recipe can be made with the left over of the famous Ratatouille.
If you do not know ratatouille, it´s a french dish made with eggplant, tomatoes and zucchini, finely cut into thin slices and arranged over sauted onions, garlic cooked with tomate puree. The dish is covered with foil and baked in preheated oven at 200 degrees for about an hour and half.

I had some left over ratatouille and I decided to turn it into this ratatouille pudding. It´s pefect to spread on a toast or eat with some vegetable sticks.

Ingredientes

  • 250 gr. cooked ratatouille
  • 1 onion
  • 2 eggs
  • 30 gr. parmesan cheese
  • fresh basil leaves finely chopped.
  • 1 tsp olive oil.

Preparation


  1. Preheat oven to 180 degree.
  2. In a pan with a teaspoon of oil, sautee the chopped onion for a few minutes then put it in a bowl.
  3. Puree the ratatouille in a blender and add it to the onion.
  4. Beat the eggs in a bowl with a fork then add them to the ratatouille onion mixture and stir.
  5. Add the grated parmesan cheese and the chopped basil leaves.
  6. Grease a mini bundt cake pan or a cupcake pan and divide the mixture in 3 or more portions according to the size of your mold.
  7. Bake in the oven for 20-25 minutes until a toothpick inserted in the center comes out clean.
  8. Let it cook completely before removing from the mold.

Enjoy it on a slice of toast with a drizzle of olive oil and some blended tomatoes.
